The iOS app is only version 2. I expect that Google will add features over time.
How do you find that Gmail is worse in the iOS browser (Safari)? Works OK for me as a mobile email platform, seems just as snappy as the app. No difference between Safari and Chrome either. I would expect that adding desktop features will require more CPU, more RAM etc. and add more and more bloat.
