You can add an environment variable that will persist across sessions
usually in ~/.bashrc on Mint.
That should work even for flatpak because the app is being run by your
user account which also reads that file.
Otherwise, you can edit the launcher itself in your Mint Menu. Find the
menu entry in the menu and right-click it, then click on Properties in
the drop-down menu. In the resulting Properties pop-up, edit the
Command: field to include the work around. (note, if you set the
variable in .bashrc, this step should not be necessary)
There is no need to create a custom launcher.
That launcher is hooked to an org.gnucash.GnuCash.desktop file. However,
I see 4 such files on this system, and I'm not sure which one is being
read by the menu. But you can edit one or all of them to include the
workaround in the Exec field there as well. (same thing as editing the
Command: field above)
