So, I apologize for having a conversation with myself, but I deleted as many TeX and gregorio files as I could find, and started over from scratch. I downloaded MacTeX and the gregorio svn through Terminal (again, Mac OS X 10.9). Running gregorio and lualatex, I got a score with dots but no pitches.
