what do I replace "CFLAGS='-I/opt/local/include'" with? I originally had the gregorio files in the default location(library), but have moved it to documents/gregorio
You don't need to replace it with anything, use it as is. Those directories have to do with where your compilers are to be found. They don't reference the location of the downloaded files, so the fact that you moved them shouldn't make a difference.
The thing that would make a difference is if your compilers are installed in a non-standard location. Given you're lack of experience, I would guess that they're right where they're supposed to be (as moving these things to non-standard locations requires a bit of experience to do).
