In order to be able to make things look pretty and fill each line, Gregorio makes use of rubber lengths which have some degree of stretch and shrink to them. Exactly how much they will stretch or shrink in a given instance will depend on the contents of the line, so if you change the contents you will probably change the amount of stretch or shrink.
The only way to avoid that would be to change the distances which control the horizontal spacing so that they weren't rubber. To do that copy gsp-default.tex into your project folder or texmf tree, rename it to something like gsp-myspaces.tex, and then start removing the plus and minus entries from some of the horizontal distances.
