The reason that this is done in modern farms is that the combine costs a
whole hell of a lot more than the grain carts do.  It's stupid and expensive
to stop harvesting to transfer the grain to transport.  You've got a big
honking expensive piece of equipment standing idle, when you could have a
cheaper piece of equipment shuttling the grain around.

there may not be roads because there's cheap anti gravity.  Fliers don't
need roads, so why build them?  And with technology, you're going to get
ever increasingly large farms.  You could end up with large cities, and vast
areas of empty space.  A farm might have fields miles on a side.  (Assuming
you've got a sixty foot grain head on the combine, it can harvest a swath
about 3.5 miles long every hour.  A 3.5 mile square is 7840 acres (about
3200 hectares).
