I spoke a little too soon.
When I would visit the stats URL, I only got the 2.4.15 page, not the
newer one. I thought I fixed that by changing the URL path in the 2.6
config to something different, but I am finding that randomly the
request is being handled by the haproxy 2.4 instance, so it gets a 404,
and haproxy 2.4 dutifully returns its configured 404 page via http2. If
I shift-reload the page a few times, it finally goes back to the 2.6
stats page, but most of the time when the stats page refreshes itself,
the browser will be back to the 404.
You can see this in action if you visit the following URL in Chrome:

Most of the time you'll get my 404 page. But if you do shift-reload
repeatedly, eventually you'll see the 2.6 stats page. And then after
that shift-reload doesn't go back to the 404. But if the page is left
alone, it will auto-refresh and go to the 404 page. Guessing that's the
"ma=60" part of the alt-svc header -- the stats auto-refresh interval is
set to 60 seconds.
