Well the gospels are a conglomeration of stories that were put together at the council of Nicea (sp?) so far as I know, and obviously that council had an agenda.

While it's true that very few people were carefully documented in those times, there is a fair bit of correspondence available from the time, and one would think that someone who raised the dead and walked on water would have attracted some level of attention. :)
