But thats not what it does, right? schema2cfgxml and schema2hbm would probably work.

No it is exactly what it does. It takes hibernate metamodel (the configuration) and
generates a set of cfg.xml and hbm.xml.

A database is not required. You could use it with a annotationconfiguration or even
a normal configuration - no schema/jdbc is required.
