It's common term used for guitar or other acoustic stringed instrument work.  
I've done a fair amount of restoration and some actual building.  Some 
luthiers are purists, and work mostly with traditional tools.  I prefer to apply 
modern power tools to do the same work.  Small routers positioned in clever 
fixtures, for instance, can produce extremely precise parts.  I've used a die 
grinder mounted on a Hardinge compound cross slide on my wood turning lathe for 
years.  With the lathe not rotating, I can make very precise cuts.

The Catgut society web site is basically engineers and scientists who also 
make stringed instruments.  They study things like how the water content of 
various glues swells the wood during curing, and the effect on final acoustics.  
They use laser interferometry to study the tuning of the plates of great old 
instruments.  I have no doubt many of the instruments they produce will age as 
well as today's old masters.

I don't know of a comparable site for brasswinds.
