The CREATE ROLL job was made for things like this.  You can specify a start
velocity, an end velocity, a start time interval, and an end note interval.
Then apply the whole thing over some number of beats/measures.  Instant
snare builds!

I do recommend, however, doing an overdub when done using the velocity
adjust to just add a little movement so that the build doesn't sound so
programmed/mechanical.. Just "ride the knob" with slight changes around the
mid-point.
