AppleCare that you can buy is an extension of the 1- year warranty that 
comes with all Macs and you're paying for not only an additional 2 
years of coverage, but you also get unlimited phone support for the 
machine, as well. Under the original warranty, you're limited to 90 
days of phone support.

If it's more than a year old, you can no longer buy the additional 
coverage.

Nothing at all unless you wait beyond the original 1 year coverage 
expires. Also, I believe that in Florida, AppleCare is only available 
to businesses.
