While mail is open, select "preferences" from the mail menu. Select "accounts" from the mail preferences window. The dialog box will display a window with all of your mail accounts. The "default" address on your outgoing e-mail is simply the one listed first. To change the default account simply drag the one one you want to the top of the list. That's all it takes.
