I have the same problem.  When I set the spool directory to a network share,
the c:\imail\spool still gets used.  I was under the impression that setting
the spool directory to another drive but not possible.  I could not find an
article describing the process to change the spool and other configuration
folders.

OK, if this wasn't the second time this happened I would shrug it off as a
fluke, but my spool directory keeps changing on it's own!

I have IMail set to spool to D:\spool
In the registry the spool dir is D:\spool

Several times now the server has started to spool to C:\IMail\spool and
D:\spool simultaneously!
This caused a server crash last night when C:\  (system partition) filled
COMPLETELY.

IPSwitch Tech Support had me search the registry for instances of
c:\imail\spool
They also had me run the entire 6.03 install instead of the upgrade.

The fix for me today was to delete c:\imail\spool

but I consider this a band-aid.

Anyone?????
