Despite the evil warning when you install (that you MUST use the real
machine name as the official host name), Ipswitch told me that I could do
it.  You just have to make sure to add the name (domain.com) to the
hosts.etc file (see p.26 of the manual).

You would think they could make this easier, since I would guess a large
percentage of people need to get mail in the form "@domain.com", rather than
"@mail.domain.com".
