Tried it but still didn't work.

I amended the domain's reply to info and applied it.  Changed it back but
still no joy on changing existing info.

Example - a new user has been created and because something is not working
the full name ends up in the First Name field.  If you copy and paste the
surname into the Last Name field, apply it and then refresh the screen it
has gone back to the First Name field again.

This is only a problem for users who's accounts have been created since we
noticed it didn't work (ie the last couple of months).  If I amend my own
information or anyone who's account has been around a while then I can add
new fields, change values, do what I want.

It's got me.

It never gets lost, all you need to do if that happens is a quick global
change to all users on the domain, say change one setting, apply it, then
change it back. BOOM your Ldap info is back.. The global change restores all
the ldap information for some reason, Don't ask me but I know it works..
