Gabriel,
I cannot say that I know what your problem is (just not enough info!), but
check for free disk space (log files could eat up lots of space) and when
running disk checker, use the most through testing (at least once), to be
sure the problem is not the disk itself.
What is recorded in the event log, before the restart? If you see any
Warnings or Errors, make sure those are fixed.
Check the IMail logs to see if they show any unusual activitiy just before
the problem occurs. I don't expect you will find anything, but if you do,
then we will have something to work with.
Do you have NT Auditing enabled? I have seen one instance where this was not
configured correctly and that cause very high disk activity and a slowdown
in SMTP service, but not a 'frozen' server. Clearing that log caused the
system to return to normal.
