Key word is mail "delivery" (to your mail server).
For example if you use antivirus gateway on separate Machine (the primary
MX) and for some reason it is down. If you set your second MX to point to
your IMail server. You can take your time to fix the problem while the mail
still reaching your users mailbox (with the risk of virus though. If you
don't want / can't take virus risk second MX should be another Antivirus
gateway).
