Ziyad,
EMail is basically US ASCII for normal header and body data. Other
characters sets can be used (at least in certain parts of email). The
character set used is defined in the email client creating the message, not
the server. The server just moves the message through the system, not
modifying any parts (except the return path, in the header) of the message.
