Do BOTH! The virus scan on the mail server is one line of defense and protects against 80-90% of the virusses today. If at all possible use one virusscanner for the mailserver and an other for the workstations. The way I have it overhere is a bit different. I have sophos on the mailserver and the workstations and Symantec is scanning the files on the servers.
