Well, it looks like your ISP can get the job done, but you have to be VERY 
specific as to what you want.

They did add an MX record for eyesondenver.com that points to 
mail.eyesondenver.com.  So technically, yes, they did add an MX 
record.  But, they don't have an A record for mail.eyesondenver.com.  So 
although mail servers will know to go to mail.eyesondenver.com, they won't 
know where mail.eyesondenver.com is.

No, that's just tradition, like "www." for web sites.  No Internet 
protocols (that I know of at least) require a specific host name.
