Single processor, 1ghz machines, 512mb ram, 512mb swap files, smtp32 process tweaked to run up to 200 smtp32 processes, a custom written job that checks the spool length and fires off extra's if needed, and it also checks to make sure they're running okay and re-starts them if they fail. Regular spool cleaning of broken crud to keep it lean. We've got two front end customer machines and a relay box for if they're not there... then a load of webservers using the relay as their conduit out from their IIS smtp as a smart host... About 2,500 domains hosted on the front end boxes each.
