My logs run 40-60MB each day.

yep. Maybe Chris has all the services logging to one file and their debug options, too.

I figure POP, IMAP, and WEB logging can be turned off until needed for debugging, esp if the machine is stressed.

SMTP is the only logging that really "counts".
