A single click only opens the mail in the preview pane, which I think is a
max of 128 characters, so to open the whole message you have to double
click. Right?  Am I missing something?  Is there a setting that will allow
the mail to open in a separate window with a single click?

Don't double-click. Single-click. A double-click sends 2 requests if you're
quick enough.
