This would happen if both servers must use a gateway server for antivirus or SPAM filtering by relaying all mail to gateway. Yes... this does override peering.
great, then using IMGate in conjunction with Imail peering would work, and therefore all re-delivery disappears. NOW we have scaleable peering solution.
Burden is on those who have to configure the workstation and manage where the boxes are located.
yep, the MUA's have to be configured to send STMP out to peer1.domain.com, read POP at peer1, and do webmail at peer1.

Doesn't quite sound right, it would depend on your MX records. This would only be the case if all peered servers were listed as equal preferenced MX records.

As the number of peered servers increases, so does the number of VRFY inquiries to determine where a single message should go. With peering VRFY inquiries are done before sending through a gateway (if specified), so sending all email through a gateway does not reduce any of the chatty VRFYs.
but VRFYs are "cheap" (and useless in the IMGate context)
If caching is built in to the peering, the number of VRFYs could be significantly reduced.
So... that's the nature of it. In a high-volume environment where you're using peering on the same LAN segment to offer multiple servers, worst case you could easily add NICs and VLAN the peered IPs. However, this is a different story if your servers are all sitting across a slow or expensive WAN link.
