Is there a way to have imail8 anti spam not check from a domain?
Yes, if it is a domain with its own IP (you should see an "AntiSpam" option in IMail Administrator for each IP-based domain).
With virtual domains, you would need to use the WARN action, and filter on the X-RBL-Warning: header (actually, I think IMail uses a different header) on the domains that you do want to scan. Other domains would have the E-mail delivered, not blocked (although they would have the header in there).
