Shutdown pop, imap, smtp, and quemgr - so no new mail comes in. Then do a restart on the 2 symcscan services. after that you can restart pop, imap, smtp, and quemgr.
Watchdog bites us in the butt every now and then also. If you checked your log files, you might see a error message like -1 or 1 when it trys to scan attachments. If it keeps doing it, make sure symscan is configured correctly. Also, don't scan all files, use the list that's commented out (plus anything you want extra). symcscan seems to get overwhelmed when it scan's everything.
