To expand on Scott's response, if you have a managed switch that can set a
monitor port, you can copy all traffic to and from that server's port to the
monitor port, just make sure whatever's on the monitor port can handle the
load, i.e. at least the same speed NIC as the server. You still need to
copper connect to do this though, unless you know how to make the WAP copy
all traffic to your MAC address.  BTW, the monitor port is called different
things by different manufacturers.

Ethereal.  It's free, it's very good.  http://www.ethereal.com .

With wireless and switched networks, it gets tricky monitoring connections
that aren't your own.  You'll have to hunt to find someone that will work
with Windows and wireless networks (and even then, you need specific brands
of hardware).  For switched networks, you're out of luck, and would need to
do something like add a hub in order to monitor the traffic.
