Thanks for the input, I checked out the log

8:00-9:00a
SMTP Local Deliveries Total - 1126
SMTP Remote Deliveries Total - 369 

9:00a-10:00a
SMTP Local Deliveries Total - 975 
SMTP Remote Deliveries Total - 332

12:00-1:00p
SMTP Local Deliveries Total - 1261
SMTP Remote Deliveries Total - 422      

What I find odd is that 8:00-10:00 is the worst time for us, but when
everything was back to normal from 12:00-1:00p the most messages were
delivered!  I'm betting (I'm not logging pop messages) that I had a ton
of pop logins that was slowing down the rest of the server.

What you want to look at is the CPU usage when the server is at 100% --
if 
"Idle" shows up as 45% to 80%, that means that the server is using less 
than 50% of the CPU (so you probably aren't experiencing the problem
with 
high CPU usage).

If that is the case when the system is at or near 100% CPU usage, it
would 
sound like you are processing a very high volume of E-mail.  But that 
doesn't correspond with the stats you gave -- a server with dual P3
600's 
should be able to easily scan well over 100,000 E-mails/day, complete
with 
virus and spam scanning.

When you next experience 100% CPU usage for an extended period of time,
you 
may want to check the IMail SMTP log file for an hour or so of that time

(perhaps all entries between 1PM and 2PM, which would be easy to
process) 
and count how much mail is being processed during that time period, to
see 
if there is an abnormally high spike in the volume of E-mail being 
processed at those times.
