The one thing that stands out for me is the amount of ram that you have. 128MB seems a little low.

The server does not receive a huge burden of e-mails (it gets about 14,000 messages for local delivery and 4,000 messages for remote delivery daily). Basically the server continually either gets really slow or stops processing SMTP connections throughout the day. The server works perfectly smooth on weekends, nights, and off-hours. The system is running on 1ghz Proliant with 128mb ram. The hard drives are all scsi and are configured with easily defragable partion sized on multiple discs running raid mirroring.
