I also thought that it could possibly be the RAM at 128mb causing the problems, but I completed an upgrade to 1gb of ram yesterday evening and today it is still experiencing issues.
The system is a compaq proliant dl380 (Imail 8 w/Declude Virus/SPAM & Msg Sniff). For storage we are using the compaq integrated Smart Array controller running Raid Level 1.
The system has 4 18.2 gb drives that are set-up as follows:
There are 2 logical drives. Drive 1 is mirrored by Drive 2 Drive 3 is mirrored by Drive 4
Logical drive 1 is partitioned into: OS - 7gb Swap - 3 gb Spool - 4gb Logs - 2.5gb
Logical drive 2 is partioned into: Mailboxes - 16gb
All partitions are NTFS.
When the system stops accepting SMTP connections, it doesn't appear that it is experiencing more than 40-50% processor usage nor is it using more than roughly 140mb of memory.
Any suggestions?
Thanks! Andy

Be more specific as to the division of server functions and disk spindles.
