When the system stops accepting SMTP connections, it doesn't appear that it is experiencing more than 40-50% processor usage nor is it using more than roughly 140mb of memory.
Are you using F-Prot.exe (which is a 16-bit process)? If so, I would recommend switching to fpcmd.exe (the 32-bit version of F-Prot). Some servers have horrible problems with 16-bit processes, which could account for what you describe.
