There's a folder on your iMail server that the webmail files are stored in, \iMail\web.  In that folder is a file called logo.gif.
Make a copy of the logo.gif file and rename it to mail.domain.name.gif (where domain.name is your domain name, ie mine is named mail.cni4you.com.gif).
