Thanks Darin, slightly more complicated than I was hoping. I thought I could just shut down the mail server, transfer it and then swap the IP address in the DNS before bringing it back on line.
On the forwarding side of things, if I do the above and then reconfigure the old server with an inbound rule to forward all messages to the IP address of the new server, shouldn't that take care of any straggler messages that are being redirected by old DNS entries?
