I agree that it's more of a pain, but a lot of our users will call if the mail server is unavailable for a single minute.
If such an infrastructure change cannot be made completely invisible, then users must be notified of time and duration of any possible degradation in service. ie, don't surprise them. Surprise is what pisses them off within a minute.
