There is no 'text mode installer' for OpenSolaris.  It's something we
haven't gotten to yet.  So, what you're seeing when you select text boot
in grub is precisely what you should see.

As for the graphical failure, you could try setting up VESA mode as
described:

Or you can boot the liveCD/USB, enable ssh and then from another box ssh
in with X forwarding enabled and run the gui-installer that way
(/usr/bin/gui-install).  Provided of course that the network interface
for the machine is recognized and configured by nwam (not sure what the
state of play is for the Asus 1000HE hardware is these days).
