What most likely is happening is server ip DNS propagation and
caching issues for you. Depending upon downstream DNS caches, hotmail
mail be resolving older addresses. The old RDNS does not match the
new and they are rejecting the email as unknown user.
You might want to look at the TTL params of your records and see what
these are set for.
