As platform support maintainer, I will argue for "simplify the choice to major OS". We have a separate sub-maintainer for each major OS (Ubuntu, Windows, Tizen, Android, ...) and having that be in a multi-valued field is useful so that if a bug filer doesn't know the appropriate maintainer, I can use that field to add them. Most of the time it's obvious from the title and details if it's specific to a particular OS, but having a field makes it easy to construct queries that are useful for platform support (sub)maintainers.
