Vincent, 
Logging conversations without both parties consent in some countries and states posses 
legal issues.  

In addition, you could explain that conversation logging is used to allow a user to be 
added to a conversation, at later time, the ability to see the entire conversation, 
and the ability to receive offline messages.

What do you think of the idea to send a feature request to inlude a "Why conversations 
are being logged" link on the warning dialog that displays a company specific 
declaration on reading the conversation logs, and also explains why conversations are 
being logged for offline messages and persistence.
