We're talking about the 'concept' of a table.
Not about a table in a database,
not about a table on a page in a book,
not about a table in HTML.

Your concept of a table doesn't fit in a table on paper:
the result is no longer a table.
Just as a database table doesn't necessarily result in a table on paper.

Isn't you main problem caused by the fact that you want to use 
PdfPTable? Wouldn't it make more sense to use tabs?
