I added two sites to google, one a Joomla based site, the other a
Wordpress site.

I then intently watched the process.

What I found is that Google is a bit slow and very tentative with a
new site.

You'll get a single visit, then one or two more visits, then a couple
more over a period of a week or two. It may take upwards of a month
before everything has been visited and is appearing.

Even if you tell google about the whole site using a site map, it will
only crawl a portion of the site in one go, and then, they won't
appear in the index for a few days or for more than a week.

That said, once you get Google's attention, it's quick. My blog has
been indexed and is publicly available for search results within hours
of a new post on it.
