I think you are correct that Apple doesn't think much of Java UIs. All the mac-heads I know despise Java (and Air) UIs. The point out that non-native UIs are noticeably slower, don't support native OS X widgets (like the slide out drawer), and don't conform to OS X conventions (like cmd-, for prefs).
Java 7 will be a good test. If they don't port quickly, then we'll know what's up. Can we run the dev version of Java 7 on mac yet?
