This assumes efficient markets. Part of the reason why the "anti-discrimination" laws exist is that not all markets are efficient.

The airlines are a good example of a market that is *not* efficient. The housing market is also not efficient--it takes quite a bit of time and money to serve a niche market that suddenly appears.
