Thank you so *very* much for that link. That guy didn't spell it out,
but he got me close enough.
It turns out that UTF-8 was using Courier for the monospace font.
Apparently, each selection of "Font for:" can be set separately. I
thought that the "Fonts for:" was a setting of its own, but is actually
a sort of "tab" for each item within it's pop-up list. It remembers and
keeps the settings of each one, separately. Changing the monospace font
of "Other Languages" to "monospace" took care of it.
Then I unchecked all checkboxes in the dialog.
All associated problems seem to be solved.
