10 degree variance in oil temp is a nit that most reasonable people
won't pick at.  That, I'm sure, would be ideal but there are too many
variables to cast that number in stone.   It will vary during different
phases of flight and with large changes in OAT.  Oil temps too cool
(<180) will not allow the contaminates to be "cooked" off and temps too
high can cause the oil to break down.  The too high end depends on
the oil used and who's opinion you seek.    I grin real big when the oil
temp in my 0-200 stays between 180 and 210 and pressure between
20 psi idle and 40 - 50 psi cruise with hot oil.
