A friend of mine years ago gave me a lovely recipe. It's rich in calories, so be warned!

2 Cornish hens
1# butter
green peppercorns

Slowly melt butter. Put several tablespoons (he used an entire little bottle) of green peppercorns in melted butter. Allow butter to cool and harden somewhat. While butter is still slightly soft, liberally rub inside and outside of hens -- use ALL of the green peppercorn butter. Roast several hours in a slow oven, basting about every 15 minutes.

Simple, but it was oh so delicious!
