Based on what you are saying, you are not actually deleting version 5. What would be on your desktop is most likely a *shortcut* to the old version 5 program, not the program itself. Obsolete shortcuts are fine to delete. However if you actually still have version 5 installed (which would mean it is in a different folder than version 7), you would need to *uninstall* it rather than *delete* it. There is an important difference between those two terms. Deleting a shortcut from the desktop will only remove the shortcut, not the program.

If both version 5 and 7 were installed using the default location, then the version 7 installation should have overwritten (and in essence removed) version 5, making the old shortcut superfluous and no problem to delete.
