First setting to "Initial Caps" fixed the entries.  Then, when I added a new
individual, the surname (which was already in the database) did NOT come in
all caps.  Whew.  I was then able to go back to "don't change what I enter".

However, I would say that the mess I was in seems like a bug, since I had
told it to not change what I enter, but it still insisted on giving me all
caps.

Hooray!  This was the answer I needed. Many, many thanks.

You want the box above the one you are referring to -"Letter Case of
Surnames". In version 5 (assuming 6 is same):  options>customize>data
format>letter case of surnames, select "intial caps" and save. Then (if so
desired) go back in and change to "Don't change what I enter".
