I'd put both events in as events, ordered appropriately, and make sure that the notes included the information on which they considered their "anniversary". Record all the details for each that you would for any marrigage, engagement, or what have you.
And for future reseachers, include a brief note explaining the legal situation; 100 years from now, folks will be fuzzy on what was happening, and 500 years from now they'll have even less of an idea...regardless how society views it at the time. You'll have to consider whether to make this private - might depend on the parties involved. Also, by not using the ill-named "marriage" field, should one or the other decide to have children, you can still document who had the child, the father if known, etc. Adoptions can be handled as they would be for any couple.
