I have limited knowledge but if firefox was ignoring your hosts file when set to "System Proxy Setting" and changing to "No proxy" changed it's behaviour then I assume you must have a system wide proxy set up. I also assume that Amarok and Banshee will be using the system proxy settings.
I don't know much about proxy settings in linux. I imagine there are different configuration GUIs for different distros and desktop environments.
